Rogue Recipe: Beef Kofta and Spiced Rice

Today's recipe is an easy one in both time and technique. It sounds a lot fancier than it is, it just takes some patience and time. Easy for big batches to mix up meal prep, or quick for that 45 minute dinner after a workout, Beef Kofta, Spiced Brown Rice, and Saffron Aioli make for a kick ass dinner or leftovers.

Ingredients for Kofta:

  • 3lbs Ground Beef
  • 1/4 cup fresh minced Parsley
  • 1/4 cup fresh minced Cilantro
  • 1/2 minced Sweet Onion
  • 1/2 jalapeño, diced
  • 3 cloves of garlic, minced
  • 1/2 tbsp Smoked Paprika
  • 2 tsps ground cayenne pepper
  • 1 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp ground Mustard Seed
  • 1 tbsp salt
  • Zest of 1 lemon
  • 2 eggs

Spiced Rice

  • 3 cups brown jasmine rice
  • 6 cups of water
  • 2 tbsps olive oil
  • 1 tbsp diced jalapeño
  • 1/4 cup thin sliced green onions
  • 1 packet Anchiote

Saffron Aioli

  • 1 tbsp hot water
  • 13 Saffron threads, crumbled
  • 1/2 cup Kupie Mayo
  • 2 tbsps Dijon mustard
  • 1 tbsp tomato paste
  • Juice of 1/2 a lemon
  • 2 tbsps olive oil

Instructions:

Kofta

mix ground beef and ingredients in a large bowl until fully mixed. Soak wooden skewers in water 30+ minutes before cooking. Take 1/4-1/2 cup of meat mixture and flatten in your hand, place skewers together on one side, then wrap the meat into a circle and crimp the edges together to make one round piece. Place kebabs on a wire rack over a sheet pan. Place in oven preheated to 425 degrees Fahrenheit. Cook for 10 minutes, turn, then cook for another 10 minutes before removing from the oven and letting rest before serving.

Spiced Rice

place rice and water in pot. Add Anchiote powder, green onions, and jalapeño to pot and heat for 5 minutes. Combine all ingredients and bring to a boil. Cover with lid, reduce heat to simmer, and let cook for 25 minutes. Fluff with fork to serve. Saffron Aioli- heat water in sauce pan, crumble saffron in a medium container. Add 1tbsp of the hot water to saffron and let sit for 5-10 minutes. Add mayo, Dijon mustard, tomato paste, olive oil, and lemon juice. Whisk together and chill for 10-15 minutes. Serve the Kofta on a bed of spiced rice with a drizzle of Saffron Aioli. Place in a pita or Naan and enjoy as a sandwich. Customize how you see fit.
